Tuna and Plantain Patties

Ingredients

Preparation

  1. Fry the onions and the leek with a couple of tablespoons of olive oil on a pan over medium low heat. Remove them from the pan before the start to brown.

  2. Cut the plantains in four pieces each and put them in a pot. Do not peel them. Cover them with enough water and bring them to a simmer. Continue simmering until soft.

  3. Let the plantains cool down and peel them.

  4. Mash the plantains and put them in a bowl with the rest of the ingredients.

  5. Mix well and form patties. Fry them with olive oil over medium low heat.
