Banana Pancakes
Ingredients
- 2 Bananas, ripe
- 1 Egg
- 1 C Whole milk
- 1 C Whole wheat flour
- 1/4 tsp Salt
- 2 tsp Baking powder
- 2 Tbsp Butter, melted
- 3 Tbsp Vanilla
- Cinnamon powder
Preparation
Mash the bananas in a bowl.
Add the egg and whisk it until incorporated.
Add the milk, vanilla and butter. Whisk to mix.
Add the flour in batches. Add the salt, cinnamon and baking powder.
Cook the pancakes in a cast iron skillet over medium-low heat greased with a little butter.
Crepes
Ingredients
- 1 C Flour
- 3/4 C Whole milk
- 3/4 C Water
- 3 Eggs
- 3 Tbsp Butter, melted
Preparation
Beat the eggs. Add the milk and water. Whisk to combine.
Add the flour and whisk until the lumps are gone.
Add the melted butter.
On a heavy bottom pan over medium-low heat add a bit of butter and remove the excess with a napkin.
Add two or three tablespoons of the batter and swivel the pan to distribute it evenly.
Cook for a minute or two on each side.
Transfer to a basket and keep covered.
Granola
Ingredients
- 2 C Old-fashioned rolled oats
- 1/2 C Pumpkin seeds (shelled)
- 1/2 C Sunflower seeds (shelled)
- 1/4 C Flax seeds
- 1/2 C Almonds
- 1/4 C Shredded coconut
- 2 Tbsp Coconut oil
- 4 Tsp Honey
- 1 tsp Cinnamon
- 1 Tbsp Vanilla extract
- 1 tsp Cacao powder
Preparation
Mix all the ingredients in a large bowl using your hands.
Spread on a baking tray and bake in a preheated oven at 300F for 15 mins.
Stir and bake for 10 more minutes.
Let it cool down outside of the oven before removing it from the baking tray.
Buttermilk Pancakes
Ingredients
- 2 cups all-purpose flour
- 2 tablespoons white sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups buttermilk
- 1/3 cup milk
- 2 eggs
- 3 tablespoons butter, melted
Preparation
In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.
Old-Fashioned Pancakes
Ingredients
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
Preparation
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
Oat Muffins
Ingredients
- 1 cup rolled oats
- 2 large eggs
- 1/2 cup soy milk
- 1 Tbsp maple syrup
- 1 tsp vanilla extract
- 2 tsp baking powder
Preparation
- Blend all the ingredients.
- Bake at 350F for ~15 mins.
Chocolate Chip Oat Muffins
Ingredients
- Oat muffins base recipe
- 1 Tbsp cocoa powder
- 1/2 cup semi-sweet chocolate chips
Preparation
- Add the cocoa powder to the batter and mix until well integrated.
- Add the chocolate chips.
PB & J Oat Muffins
Ingredients
- Oat muffins base recipe
- Peanut butter
- Strawberry jam
Preparation
- Fill the cupcake molds half-way. Add a tsp of strawberry jam and a drizzle of peanut butter.
- Add more batter to fill the molds all the way to the rim.
