Tuna and Plantain Patties
Ingredients
- 2 Plantains
- 1/4 Onion, chopped
- 1/2 Leek, chopped
- 3/4 C Cilantro, chopped
- 2 Cans Tuna
- 2 Eggs
- 3 Tsp Whole wheat flour
- Olive oil
- Salt
Preparation
Fry the onions and the leek with a couple of tablespoons of olive oil on a pan over medium low heat. Remove them from the pan before the start to brown.
Cut the plantains in four pieces each and put them in a pot. Do not peel them. Cover them with enough water and bring them to a simmer. Continue simmering until soft.
Let the plantains cool down and peel them.
Mash the plantains and put them in a bowl with the rest of the ingredients.
Mix well and form patties. Fry them with olive oil over medium low heat.
